Crush & Cuisine is a three day event representing a commitment to the culinary arts, bringing together Food, Education, Authenticity, Spirits, and Tastings (FEAST). Be a part of the festivities, flavors, education, golf and more with a portion of the proceeds benefiting the Clean the World Organization, South Florida Meeting Professionals International Educational Scholarship, and other charities soon to be announced. 


The “Uncorked, Unplugged, Unabashed” Royal Tasting

Enticing aromas greet you as you arrive on the red carpet, a specialty glass is presented to you and your journey begins. Travel internationally through the world’s greatest appellations escorted by our invited guest wineries.  Delight with dinner-by-the-bite; generous appetizers and heavy hors d’oeuvres created by our featured chefs, local restaurants and culinary partners. Enjoy regal parings and intuitive Oenology.


“The Last Syrah” Dessert Buffet/Dessert Wines

The evening’s final detail will be more then a simple nightcap; it will envelope your body with a nightclub beat, indulge your senses with confectionary scents and engage your palate with spirits and wine. The Westin’s own executive pastry chef will masterfully pull sugar and present sweets to engulf your palate. From custom-rolled cigars and cognacs served in dark chocolate to aperitifs, to refreshing ice-wines and distinctive spirits, this “final” detail will be more than just a “Last Syrah.”


Tastings on the Tee

Perhaps the Red Stripe or Corona, Finlandia Bloody Mary, Gentlemen Jack or sampling bites will aid in your play? Enjoy this delectable shot-gun tournament on The Westin Diplomat’s 18-hole championship course, managed by Troon Golf.® Whether a novice or a fierce competitor you will delight in the competition especially if you sink that hole-in-one for a car! Ample chances for all playing levels to win cash and prizes but only one foursome will receive the Grand Prize!


Tips, Techniques, & Tastings - Chef Demonstrations
"Stuffed, Rolled, and Filled"

This delectable event will include Chef David Hackett, Chef Ron Radabaugh, and a guest chef. How do they do that? Taste your way through live cooking demonstrations, teaching tips and techniques from our featured chefs. Guests will learn knife skills, pairing elements, and unique uses of spices and food items. This is an interactive class with participation from the audience.


"More Than Just Good Wine" Education
Cabernet Sauvignon Component - Blending Session

Blending: Like a chef seasoning a dish or a sauce, the winemaker adds a balance of red and white grapes for a Chateauneuf de Pape, Cote Rotie and even Champagne. In the case of a Bordeaux the grape variety of Cabernet Sauvignon and Merlot are blended. This seminar with allow attendees to discover the art of blending through taste, sight and smell. We will be blending Cabernet Sauvignon from different vineyards to achieve a more balanced wine. We will have cabernet from Mountain tops, hillsides, bench breaks and valley floor to work with. This event is to be held by Peter Repole Vice President of Majestic Fine Wines.

“Masters of the Vine” Blind Tasting Event

The dark will heighten the bouquet as your wine knowledge is tested. Will it be the aggressive flavors or the smooth balance that will give it away?  Sip, hold mid-palate, feel the body, determine the depth and then the aftertaste. Blinded to the legs, inky color or transparency, will you be able to determine the appellation, the cépage or even if it is a basic, premium or cult wine?

Olive Oil & Balsamic Vinegar Tasting

Olive Oil Tasting: Just as wines vary in depth and nose, so too do the grades and characteristics of olive oils. From nutty to herbaceous or a pungent peppery to a rotund sweet, the education and use of olive oils for cooking and as a condiment will be discovered.

Balsamic Vinegar Tasting and What to Do With It: Did you know Balsamico traditionale is the most expensive, and that is from the Modena region or that traditionally aged balsamic outside the Modena region is sometimes called Salsa di Balsamico? Discover various flavors for marinating, dipping breads and fruits and even for sweet beverages as well as some desserts.


Grande Finale Dinner and Auction
Inspire Your Palate, A Sensual Evening to Embrace Your Senses

La grande dame of “Crush & Cuisine” will be a formal gastronomic showcase. The pre-show reception will offer Grande Marque champagnes. The accompanying Caviar, Crudités, and Carpaccio will engage your appetite.   The philanthropic live auction has been developed by travel industry specialists that include members of the South Florida Meeting Professionals International Organization and Westin Hotels. Items in the auction will entice your adventure in travel and shopping with proceeds benefiting Clean the World Organization, South Florida Meeting Professionals International Educational Scholarship, and other charities soon to be announced. As the bells chime, the lights will dim and the curtains will rise unveiling “The Feast,” a six course dinner hosted by Executive Chef David Hackett, which will embrace all of the senses. Each course will be a platform of Westin culinary talents from across North America.  Complementing wine selections will enhance the flavors of every course.


Farewell Brunch

Sunday morning, especially our Sunday morning, means Bloody Marys, Mimosas, strawberry sakerita and AiZian coolers to counter balance the weekend’s “Crush” coupled with an AiZian brunch with assorted dim sum, tandoori and teppanyaki. A more favorable experience is often the result when dishes are prepared with fresh locally grown produce, meats and prepared table side. This farewell brunch will be the perfect bon voyage for your journey home feeling refreshed and renewed.
